Founded in 1980 by three school friends—Giambattista Cilia, Cirino Strano, and Giusto Occhipinti—in Vittoria, southeastern Sicily. COS helped pioneer the revival of native Sicilian grapes and natural winemaking on the island. The estate became certified organic in 2007 and is known for aging wines in buried terracotta amphorae. Frappato is one of Sicily's most elegant native reds—light, aromatic, and food-friendly.

Produced from estate vineyards in the Vittoria region.
Orientation
230 meters in elevation. Flat exposition.
Soil
Red soil of medium consistency; made up of subalpine sands composed of limestone and silica.
Viticulture
Hand-harvested. Vines average 15 years of age.
Vinification
Spontaneous fermentation in concrete tanks on the skins with indigenous yeast.
Aging
Eight months in concrete vats followed by three months in the bottle before release.
