Eduardo Torres Acosta grew up making wine on Tenerife's volcanic soils before moving to Sicily in 2012. After working at Arianna Occhipinti and Passopisciaro, he launched his own project in 2014, eventually converting a small Etna garage into his winery in 2018. The Pirrera vineyard is a single contrada at 850 meters on Etna's coolest north-facing slope, named for volcanic stones from a 1614 lava flow. Vines over 50 years old, mostly Nerello Mascalese with local varieties, foot trodden whole cluster, spontaneously fermented in cement without temperature control, then aged 16 months in large Slavonian oak. Very little sulfur. Ethereal and high-toned with fine tannins and vibrant acidity. For grilled meats or aged cheeses.
