François Cotat is one of the Loire Valley’s most revered winemakers, crafting Sancerre with unmatched depth and longevity. His 2017 Sancerre Rosé Chavignol is no exception—a rare, structured Pinot Noir rosé from the steep, chalky slopes of Chavignol. While most rosés are made for youthful drinking, Cotat’s version is built to age, gaining complexity and nuance over time.

Delicate aromas of wild strawberry, blood orange, and white cherry are layered with crushed herbs, wet stone, and a faint smoky edge. The palate is textured and precise, with lively acidity and a firm mineral backbone leading to a long, saline finish. Compared to lighter, fruitier Sancerre rosés, Cotat’s Chavignol is more structured and contemplative, closer in spirit to fine white Burgundy than a typical rosé.

Best enjoyed with shellfish, smoked salmon, or charcuterie, this 2017 Sancerre Rosé is drinking beautifully now but will continue to evolve over the next several years. A fascinating and distinctive expression of Loire Pinot Noir.

Cousins Pascal and Francois Cotat are often considered the greatest domaines in Sancerre. Like Boulay, they work principally with the Kimmeridgian limestone soils of Chvavignol. But Cotat wines are very unique; these are incredibly voluptuous, concentrated Sancerres that demand 5 years or more before they are truly ready. And they last and last.

While there's plenty of tingling acid and herbaceous accent in these wines, these are defined by layers of ripe fruit and muscular structures. Really, no other Sancerres are so opulent, and the power is shocking the first time you taste them. And no other producers can pack Kimmeridgian minerality (which is, while quite stony, almost redolent of oyster shells and shrimp tails) quite as densely as the Cotats can.

Between the cousins there are subtle differences. Pascal tends to make the more powerful wines (he has the older vines), while Francois' are more elegant, but it would be easy to confuse one for the other in a blind tasting.
