Average age of this full bodied, rich, and complex Oloroso is 18 years. Grapes were selected for their intensity of flavor and astute structure, then aged oxidatively, through a solera system.

The PM Spirits Sherry project is a joint venture with owner Nicolas Palazzi and his friend, colleague, and living legend, Eduardo Ojeda (Equipo Navazos & Grupo Estévez). This bottling showcases their master blending skills needed to achieve such a harmonious wine from different casks in several exceptional criaderas (a single level in a solera). 

Enjoy on its own, or pair with richer dishes from a French cassoulet to a grilled rib eye.
