After a few years under flor, the wild yeasts died off and this elegant wine made its way into a Palo Cortado solera, to continue aging oxidatively. This was blended from intermediate criaderas and is an average of 15 years old.

In a highly regulated industry, Palo Cortado is an outlier, in that each bodega decides if, when and how to make one. It is a beguiling wine, with the salty, mineral almonds, finesse and elegance of a fino as its backbone, with complexity layered on in the form of coffee, chocolate, nuts, smoke, leather, caramel, wood, tobacco and so much more.

This project from famed Eduard Ojeda, the brainchild behind Equipo Navazos and consultant at Grupo Estevéz with his colleague Nicolas Palazzi of PM Spirits is a rare glimpse into the creative energy of Jerez.
