Canopus is redefining what Malbec can be, moving away from the heavy, oak-driven style and toward something fresher, lighter, and more expressive. Malbec de Sed (literally “Malbec of Thirst”) is made with organic farming, whole-cluster fermentation, and minimal intervention, resulting in a wine that’s vibrant, easy-drinking, and full of energy. The 2023 vintage is especially bright, leaning into fruit and acidity rather than weight and extraction.
Expect crunchy red cherry, wild raspberry, and a hint of pomegranate, layered with dried herbs, violets, and a touch of black pepper. The tannins are light, the acidity is mouthwatering, and the finish is pure and refreshing. Best served with a slight chill, it’s perfect for casual dinners, charcuterie, or just sipping on a warm evening. This is Malbec in its most drinkable, joyful form.
