Patrick Sullivan is an Australian winemaker based in the Gippsland region of Victoria, working with a network of growers across southeast Australia. He trained at Curly Flat in the Macedon Ranges and spent time in Burgundy before establishing his own label. Sullivan is known for minimal intervention winemaking: wild fermentation, extended skin contact for whites, and little to no added sulfur. Bull Swamp Chardonnay comes from a vineyard in the Strathbogie Ranges at elevation, with cool-climate conditions. Whole-bunch pressed, wild fermented in old oak, no batonnage, bottled with minimal SO2. Part of Australia's new wave of textural, site-specific whites.

This is still embryonic, with nougat and gunflint lifting tight, unevolved citrus and tropical tones. "The 2024 Bull Swamp Chardonnay leads with lanolin and white flowers, dried fennel seeds, ginger root, lemon pith and lantana. The wine is rich; a feast of salted/crushed nuts, plump creamy texture and an attractive phenolic tension through the finish. This is a lovely wine, detailed and delicious. The acidity is a highlight—penetrating and sapid. It will be better in a year or two. This comes recommended. 13.8% alcohol, sealed under Diam and wax." -Erin Larkin
