John Raytek founded Ceritas in 2005 after working at Flowers, Rhys, and Copain. His wife Phoebe Bass grew up farming the Porter-Bass vineyard—her family's biodynamic property in Sonoma Coast. The winery name, Ceritas, means "mineral expression of the soil." Their philosophy: the vineyard is the true author of the wine. This Chardonnay comes from Old Wente clone vines on the vineyard's north-facing side, where the extended growing season captures optimal ripeness while maintaining acidity. Fermentation uses indigenous yeasts, new oak is used sparingly, and the wine is neither fined nor filtered. Raytek employs an unusual technique: allowing slight mold to develop on must before wild fermentation begins—counterintuitive but reflecting confidence in vineyard health. The 2020 shows tangerine oil, hazelnut, and Chablis-like mineral intensity. All tension and verve.
