From vines planted between 1958 and 1988 on clay-marl soils at Cormot-le-Grand, this Hautes-Côtes de Beaune showcases the elevated, cooler side of Burgundy's Côte de Beaune. Seiichi Saito of Domaine Petit-Roy farms biodynamically and employs whole-cluster vinification with native yeasts, then ages the wine one year in used barrels followed by six months in tank. The result is a Pinot Noir of surprising concentration and mineral drive from old vines at altitude, with the kind of precise tannin structure and clean aromatic profile that reflects Saito's refusal to use any new oak.

From the commune of Cormot-le-Grand, northwest-facing, limited sunshine exposure, clay-marl soil. 100% whole cluster, minimal SO2 addition before vinification, 3-day cold maceration at 12 degrees C, semi-carbonic maceration and ambient yeast fermentation in tank, gentle punch-downs at the end of fermentation, malolactic conversion simultaneously during alcoholic fermentation, aged for 12 months in used barrels and for an additional 6 months in tank, no fining, no filtration, SO2 added when racked to tank and before bottling (20-50 ppm total at bottling).
