The 2021 Les Terres de Phileandre Bourgogne Hautes-Côtes de Nuits “Célenie” by David Duband is a vibrant and expressive Pinot Noir that beautifully showcases the unique terroir of the Hautes-Côtes de Nuits. David Duband is making great wines exclusively from the Côte-de-Nuits. He loves whole cluster fermentations. He said, "Once I had tasted old bottles from Dujac and DRC made with whole clusters I knew I wanted to make similarly aromatic wines." His business partner François Feuillet bankrolled the purchase of Jacky Truchot's vineyards in 2005. Viticulture is a mix of organic & biodynamic methods but not certified as such.

Farmed without herbicides and pesticides; hand harvested with careful triage in the vineyards and again in the cellar.
Vinification
60% whole cluster fermentation, 11 day cuvaison with 5-7 punch downs per day and sporadic pump overs. Following pressing, the wine settles two weeks in barrel before being transferred to 25hL foudres for ageing. No sulfur added.
Aging
Aged 10 months in foudres (25 hL) followed by a minimum of 3 months in tank prior to bottling without fining or filtration.
