Vineyard
The name "Poruzots" stems from the latin plural petrosa, or "rocky place". De Montille's 0.63 hectares parcel is Poruzots "Dessous", the stonier section of the vineyard located next to the famed "Les Genevrieres". This vineyard benefits from early harvesting to keep its structural tension.

Fermented in 50% demi-muids, 50% barrels (25% max new oak). Regarding sulfur, whites have the following: 75-100 mg/l total SO2, 30-35 mg/l free SO2.
Aging
Aged one year in demi-muids and barrels, then aged another 5 months in stainless steel.
