Lean, mineral Mâconnais Chardonnay with a decade of aging potential—from 40+ year old vines on sandy, schistous soil at 240 meters. Olivier Giroux took over this estate in 2002 and achieved organic certification in 2014. The domaine owns nearly 30% of the entire Pouilly-Loché appellation. Indigenous yeast fermentation, mostly stainless with a touch of used oak. Pure, saline, age-worthy.

Olivier owns 1.6 hectares of 40-year-old Chardonnay in En Pres Forêt, situated at 240 meters altitude with sandy, stony soil atop schist mother-rock. Aged 90% in stainless steel and 10% in used 500-liter oak barrels, this cuvée is both generous and elegant, with a pronounced saline streak and the ability to evolve well for a decade or more in bottle.
