When Édouard Vocoret inherited five hectares of premier and grand cru Chablis vineyards in 2023—including parcels of old massal-selection vines planted in 1956 and 1962—he and his wife Eleni already had a decade of artisanal winemaking behind them. The couple met during the 2010 harvest in New Zealand and established their domaine in 2013 with just 3.3 hectares, committed to single-site wines that reveal each plot's individuality. Butteaux, perched on the superior Kimmeridgian limestone that defines great Chablis, is fermented with native yeast in stainless steel, then aged one year in old barrels and bottled unfined and unfiltered. The 2023 vintage's generous sunshine produced a Chablis of rich concentration without sacrificing the appellation's hallmark saline precision—a new-generation expression of one of Burgundy's most ancient terroirs.

"The 2023 Chablis Les Butteaux 1er Cru is now around 0.52 hectares as the original part was augmented with a new 0.20-hectare plot. This has a reserved bouquet, fine delineation, hints of white fruit, Granny Smith and crushed stone. The palate is much more expressive with good concentration, tightly wound, fine acidity, and a hint of lemongrass popping up on the finish. I bet this would blossom with 24 hours' aeration upon which my score is based." —Neal Martin

Exhibiting notes of green apple, oyster shell and lemon zest, it’s medium to full-bodied, bright and tense, retaining plenty of classically Chablisien character, and concludes with a pure, searingly saline and precise finish.
