He also knows to grow great grapes it takes patience. The most important decision is when to pick — waiting for the grapes to get perfectly ripe. As a source of fruit to some of Champagne's great producers (Aurélien Laherte and Thomas Perseval among others), he knew his timing as winemaker was going to be just as important.
It was imperative that his Champagne be no less impressive than those bottles made by the people he was selling to. With his meticulous attention to detail, and a little help from his friends, Emilien has taken the leap to making his own wine.
