One of the first Pet Nats to help popularize the style, this is deeeeeeeelicious bubbly. Organic grapes are direct pressed into stainless steel fermenters, but before the fermentation is complete the wine bottled under crown cap. The yeast keeps eating away at the sugar, making a little more alcohol (yay!) and carbon dioxide, which gets trapped in the bottle and dissolves back into the wine -- which makes for tasty little bubbles when we open the bottle here with friends (double yay!!)
