Laherte Frères’ Champagne “Ultradition” Brut NV, based on the 2021 vintage, is a balanced and inviting blend that captures the essence of the estate’s vineyards in the Coteaux Sud d’Épernay and the Marne Valley. Primarily composed of Pinot Meunier, with additions of Chardonnay and Pinot Noir, “Ultradition” reflects Laherte Frères’ dedication to biodynamic and organic farming practices. This cuvée, vinified in a combination of stainless steel and oak barrels, offers both freshness and a hint of complexity, with the Brut dosage enhancing its accessibility and broad appeal.

On the nose, “Ultradition” reveals aromas of ripe apple, pear, and a touch of citrus zest, along with subtle floral and pastry notes. The palate is vibrant and well-rounded, featuring flavors of orchard fruits, lemon, and a hint of almond, supported by a fine, creamy mousse. The Brut finish brings balance, leaving a clean, refreshing impression with a gentle minerality.

Grapes | 60% Pinot Meunier, 30% Chardonnay and 10% Pinot Noir

Vineyards | Selected parcels in in the Côteaux Sud d’Epernay and the Vallée de la Marne. Clay-limestone soils with marnes, chalky sub-soils.

Vinification | Primary fermentation takes places in a combination of foudres, barrel and concrete tank with regular lees stirring; partial malolactic fermentation; aged on the fine lees for 6 months; 6,5 gr/l dosage.

Aurélien makes wines of power and whimsy, decadence and tension. All of his wines are aged in neutral barrels, do not go through malolactic fermentation and have just enough dosage to balance the wine and showcase the terroir.

"Disgorged in spring 2020 with 4.5 grams per liter, the latest rendition of the NV Extra-Brut Ultradition offers up aromas of citrus zest, pear, fresh bread, white flowers and almonds. Medium to full-bodied, ample and chiseled, it's long and concentrated, concluding with a saline finish. In this cuvée, domaine fruit is supplemented by some 40% purchased must."

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
