François Pinon’s 2023 Silex Noir is dry Vouvray with a serious edge—Chenin Blanc grown on rare black flint soils that impart a smoky minerality and a taut, electric frame.

The wine opens with green apple, pear skin, and citrus peel, layered over a deep core of crushed stone and subtle herbal tones. There’s a touch of waxy texture on the mid-palate, but the finish is laser-focused and bone dry. Fermented with native yeasts and farmed organically, it’s a wine that feels natural and pure, but also incredibly precise.

This is Chenin for lovers of tension and terroir—more about mineral expression than fruit ripeness. Drink it now with seafood and salty cheeses, or let it age and evolve for years into something truly profound.

Perfect for: oysters, goat cheese, shellfish, or cellaring alongside your favorite dry Rieslings and white Burgundies.

Antonio Galloni

"In its first year, the 2023 Vouvray Silex Noir is a little closed; that’s often the case with wines made from vines grown on flint. Delightfully juicy and charming on the mid-palate, a touch of smokiness meets primary fruit flavors akin to pineapple to pear. While it has 17g/l of residual sugar, natural acidity tidies this wine up like a cleaning product advert cutting through grease. It might not be the most fashionable style, but it's absolutely delicious with an appetizing tanginess. Leave it another year and it'll be showing even better." -Rebecca Gibb MW

What importer Bowler Wine has to say about this wine...

100% Chenin Blanc. Silex noir is a rare black flint found almost exclusively in this tiny corner of Vouvray, the Vallée de Cousse. it lends its name to this bottling, one of Pinon's two demi-sec bottlings (other is "Trois Argiles"). "Silex Noir" comes mainly from 2 parcels totaling 3.7 hectares on a south-southeast slope. The flinty soils drain well and thus are warmer and help ripen grapes earlier than in other parcel. Overall vine age averages 45 years and the farming has been certified organic since 2007. "Silex Noir" is made identically to Pinon's other demi-sec terroir bottling, "Trois Argiles". The bunches are harvested by hand, rigorously sorted and directly pressed. The juice flows by gravity into underground tanks for a spontaneous native-yeast fermentation that lasts 2-3 months and stops naturally in Pinon's cold cellar. The wine is aged on its fine lees for 4-5 months in a variety of old oak ranging from 500-liter demi-muids to 20-hectoliter foudres. The 2018 finished with 26 grams RS and 4.1 grams acidity.
