A computer scientist and a chemist walked away from their careers to farm limestone slopes in Canon-Fronsac—and it shows. The Hubau family has practiced 100% organic and biodynamic farming since founding the estate in 1988. This 2016 is soft, supple Merlot (95%) with Malbec, expressing pure red fruit and cassis with earth and mint underneath. Parcel-by-parcel vinification in concrete, restrained oak (33% new, 18 months), and limestone terroir that stands apart from the surrounding flat terrain create a wine of clarity and precision.
