Giovanni Canonica started making wine in 1983 by crushing grapes with his feet and avoiding sulfur—decades before natural winemaking became a movement. For years, his wines weren't commercially sold; only in 2000 did growing interest bring them to market. From just 1.5 hectares of the Paiagallo vineyard directly above the village of Barolo—an east-facing site that borders the legendary Cannubi—Canonica produces Nebbiolo of authentic, unvarnished character. No herbicides, no pesticides, hand-destemmed, indigenous yeast fermentation for thirty to forty days, vertical hand press, aging in cement and Slavonian oak. The 2011 offers dark berry and herbal complexity with ripe tannins and a medium-bodied frame that reflects Paiagallo's younger soils and more ethereal Barolo style.
