Young vines of Carricante, planted at 750 meters of altitude. The vines are 100% ungrafted. This is also the rare Sicilian wine to still employ a palmento, the stone buildings that traditionally housed a family's wine press and the stone basins where wine was aged and/or stored. The lava stones allowed for natural temperature control, and although the EU generally outlawed the use of these rustic outbuildings (due to hygienic concerns, we imagine), they remain an important piece of Sicilian history.
“A thrust of herbs gives way to notes of crushed oyster shells, raw almonds, stone dust and nectarines as the 2020 Etna Bianco Palmento Caselle slowly unfolds in the glass. It floods the palate with silken textures and ripe pit fruits, all lifted by tantalizing acidity. Flinty minerals and hints of sage form toward the close. The 2020 finishes with a gentle tension and medium length, leaving suggestions of ginger and dusty inner florals to linger. This is savory to the core.” — Eric Guido, Vinous
