This is the calling card—the wine that made the estate's reputation. The Saumagen is a limestone amphitheater in Kallstadt, a former Roman quarry planted with vines in 1810 and home to some of the greatest, most long-lived dry Rieslings in all of Germany. Koehler-Ruprecht farms a prime southeast-facing parcel of old vines here, ferments spontaneously, and ages in ancient neutral casks with a patience most modern producers have long abandoned. 'Kabinett Trocken' is the house term for the lighter, more delicate tier off this hallowed site: an utterly elegant, dancing, 'true' dry Kabinett with a spine of limestone running clean through it. The cool 2021 vintage gave it tension and precision; give it a few years and it will only get better.

"The 2021 Riesling Kallstadter Saumagen Kabinett trocken is both the first and the last harvest in this site, the very first pick of the green-tinged grapes and then the last pick, on 26 October 2021, of the grapes that still had a bright green color. The nose is restrained, but peach skin and pear peel come through, along with a subtle yeastiness. The palate comes in beautifully buffered, with apparent freshness, doing justice to its Kabinett status. It's bone-dry, smooth and, in a Pfalz-way, slender, still colored with that lovely streak of lemon and peach. This has both substance and style." —Anne Krebiehl MW

"Bottled in early July the this year, the 2021 Kallstadter Saumagen Riesling Kabinett trocken is still young and a bit closed on the clear, deep and stony nose. Fine and very elegant on the palate, this is a round, lush, refined, firm and persistently salty Saumagen with a long and intense finish. This is a serious, sustainably intense Riesling with substance and terroir expression after a long hang-time. It needs tine, though. 11.5% stated alcohol. Natural cork." —Stephan Reinhardt
