Grapes | 60% Pinot Meunier, 30% Chardonnay, 10% Pinot Noir

Vineyards | This Champagne comes from the Côteaux sud d’Epernay, Vallée de la Marne and Côte des Blancs

Vinification | 60% vintage, 40% reserve wines; grapes are picked up by hand when fully ripen, and traditionally pressed. Alcoholic fermentation in vats and barrels according to grape varieties and plots. Malolactic fermentation partly made.
Ageing during 6 months and light filtration before bottling during the spring time; 6-8 gr/l dosage. Disgorgement:

Aurélien makes wines of power and whimsy, decadence and tension. Maybe it is because of his biodynamic approach, maybe it was his training with Antoine Sélosse or maybe he is simply one of the best vignerons in Champagne. All of his wines are aged in neutral barrels, do not go through malolactic fermentation and have just enough dosage to balance the wine and showcase the terroir.

"The NV Extra Brut Ultradition, the entry-level wine in this range, is wonderfully deep and fleshy, with plenty of Meunier character driving the blend. Dried pear, chamomile and spice are some of the notes that open in the glass. Generous and inviting, the Ultradition has plenty to offer. This release is based on 2017, with reserve wines from 2016 and 2015. Drink it over the next few years." -Vinous

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon.
