Brothers Adrien and Guillaume Pire took over Château de Fosse-Sèche in 2012 and have transformed it into a biodynamic showcase, certified by Biodyvin. Their philosophy dedicates 30 hectares to natural habitat for every 15 hectares of vines—believing effective biodynamic cultivation cannot exist without surrounding biodiversity. The estate sits on Saumur's Jurassic-era flint plateau, where curved vineyard aspects and heat-absorbing flint stones create a warming microclimate tempered by cool breezes. Eolithe, composing 60% of production, is 99% Cabernet Franc with 1% Cabernet Sauvignon from old vines. The wine ages 21 months in an old beer tank—an unusual vessel that provides gentle oxidation without wood influence, keeping focus on terroir. The 2021 Loire vintage delivered beautiful intensity of fresh red fruits with fine, precise tannins. Expect floral notes, raspberry, redcurrant, and the elegant restraint of classic cool-climate Cabernet Franc.
