Stéphane and Carine Sérol’s Chez Coste pushes the boundaries of natural winemaking in the Côte Roannaise, taking their biodynamic Gamay Saint-Romain to its most radical expression. The thirty-year-old vines on this 1.5-hectare parcel of deep granite at 400 meters elevation are a decade older than the Oudan parcel, yielding fruit of greater concentration and complexity. Amphora aging—clay vessels that neither add nor subtract flavor the way wood does—allows the grape and its granitic terroir to speak without intermediary. The result is dense, fragrant, and alive: pure grape essence with the spicy, mineral character that defines this rare indigenous variety.
