François Cotat is old-school Sancerre at its most uncompromising. He prunes to half his neighbors' yields, harvests late for full ripeness, ferments with native yeasts, ages in fifty- to one-hundred-fifty-year-old foudre, and bottles without filtration. The Cotat family has been making wine in Chavignol since the 1940s, and François took charge in 1987. Culs de Beaujeu is one of Chavignol's three designated crus, with seventy-year-old Sauvignon Blanc vines rooted in terre blanche—chalky Kimmeridgian soil rich in fossilized oyster shells. The 2023 offers a rounder, riper expression than usual, with kumquat and passion fruit layered over graphite and limestone minerality that deepens in the glass.
