Debit is a white grape almost nobody outside Croatia has heard of, which is exactly why it's fun. Grown along the Dalmatian coast and farmed organically, it lands here as a pet-nat: one fermentation, bottled before it finishes, and left to trap its own bubbles. That gives you a cloudy, low-pressure fizz — more sea spray than Champagne — with green apple, lemon pith and a chalky, savory bite. It's the house-wine version of natural sparkling: unfussy, dry, and gone faster than you planned. Pomalo means "take it easy" in Dalmatian, and the wine takes its own advice.
