Kapistoni is a small, family-run winery in Georgia’s central Kartli region, dedicated to organic farming and traditional Georgian winemaking in buried clay amphorae (qvevri). Their 2022 Chinebuli Amber is made from 100% Chinebuli, a rare white variety known for its floral aroma, high acidity, and subtle tannic structure when fermented on skins.
Fermented naturally with indigenous yeasts and macerated on the skins for several months in qvevri, the wine pours a glowing amber-orange color and offers a nose of dried apricot, chamomile, orange zest, wildflowers, and dried herbs. The palate is dry, layered, and slightly grippy, with firm acidity and a salty, tea-like finish that lingers.
This is a textbook amber wine for fans of natural wines, Georgian tradition, or adventurous white wine drinkers looking for something both ancient and fresh. Pair it with spiced dishes, roasted vegetables, hard cheeses, or traditional Georgian cuisine like khinkali or lobio.
