mainly from Coteaux Sud d' Epernay and Vallée de la Marne. Sourced from vineyards with an average age of 25 years and more than 40 years for the parcels that are selected for the elaboration of the red wine

Farmed in a sustainable manner and influenced by ecological methods with a strong emphasis on biodiverstiy.
Vinification
60% white pressed Meunier, 30% maceration, 10% red Meunier. The goal is to strike a balance between a fruity Rosé d’assemblage and the meatier aspects of Rosé de Saignée. Grapes are picked up by hand when fully ripen. Alcoholic fermentation takes place in in vats, foudres and barrels. Malolactic fermentation is partly made.
