Patrick Javillier is a cheerful and thoughtful fellow in the picturesque village of Meursault. Before he was a winegrower he was a courtier, a sort of broker between growers and negociants and sometime between producers and importers. His family had worked as courtiers for many generations. He knows Meursault inside and out, every grower, every vineyard. He kept adding and adding bits of vineyards to Domaine Javillier until it was big enough to support him and his wife.
He vinifies each parcel separately and then blends the wines together to create a wine of greater complexity. He experiments continually to try to improve each wine. He has no set recipes, he is always adapting and improvising. One thing that is consistent, however, is that the wines are always great and age beautifully.
