Clouet is a small grower-producer in Bouzy, which is famous for its Pinot Noir. They also are fortunate to have a small plot in Chouilly, another Grand Cru site, but where Chardonnay reigns. Not a bad combination!
At Clouet they take their Grand Cru Pinot and Chardonnay and blend it to make Champagne in a decadent but fresh all-steel style, like you get at Billecart-Salmon. The wines do undergo malolactic fermentation to soften the acidities and give extra depth and richness to the Champagne. It's a style of NV Champagne that, like Krug and Boli and a few others can improve with age.
