Peter-Jakob Kühn is the biodynamic innovator of the Rheingau. His soils are rich with quartz, a mineral which helps regulate heat and acidity and gives wine a saline quality. Kühn has some very fine sites, including two vineyards within the Grand Cru Doosberg, which is famous for just those quartz soils (although southern exposition and excellent drainage also contribute to its fame).
