Zero dosage Champagne from a one-hectare parcel called "Le Jardinot" in Polisy, deep in the Aube—closer to Burgundy than the grande marques. Amaury Beaufort started his own label in 2018 after years working his family's chemical-free vineyards (untreated since 1969). 100% Pinot Noir fermented in 15-hectoliter oval casks, made entirely without sulfur. The "XX" is part of his numbered release series. This is Champagne made like Burgundy—biodynamic farming, Burgundian vessels, no additions.
