Anne and Étienne Sandrin are the definition of micro-production Champagne. The couple took over family vineyards in Celles-sur-Ource in 2006, converting to organic and biodynamic farming, and didn't release their first bottles until 2014. Le Bruyant comes from a single hectare of Pinot Noir on the Côte des Bar's Kimmeridgian limestone—the same geological formation as Chablis—fermented with indigenous yeasts and aged two to three years on the lees before disgorgement with zero dosage. The 2019 base vintage survived severe April frosts and a record July heatwave to deliver grapes of exceptional concentration and balance. Only about six hundred and ninety bottles produced. This is Champagne as farm product—unmanipulated, terroir-driven, and vanishingly rare.
