Perched on steep, east-facing slopes, Vau de Vey is one of Chablis’ most underrated Premier Crus, and Roland Lavantureux makes one of its most focused, terroir-driven expressions. The 2023 vintage brings a beautifully crisp, mineral profile, thanks to a cooler growing season that kept acidity high and fruit tones lifted.

Look for green apple, lemon peel, and white flowers on the nose, followed by oyster shell, wet stone, and a faint whisper of smoke. The palate is linear and mouthwatering, with bracing acidity and a finish that lingers on chalky texture and citrus zest. This is classic Chablis—steely and clean, with just enough mid-palate weight to carry it through richer dishes like scallops, goat cheese tart, or roast chicken. A Premier Cru with serious cut and clarity.
