This cuvée comes from a single, 0.3 hectare vineyard planted in 1959 (named la Fosse). It has never seen mechanical harvest methods.
Soil
This plot features both of the primary soil types of the village: more limestone on top, more clay on the bottom.
Viticulture
Practicing organic; use of high quality organic composte for the soils and vines; all fruit is hand-harvested. The soils are tilled by a horse named Vénus.
Vinification
Natural yeast fermented in 600L tonneaux; 100% malo; bottled unfiltered; manual riddling; non-dosé, SO2 50 mg/l
Aging
aged sur lattes for 5 years on cork
