A blend of mostly Mencía with smaller amounts of Bastardo (Trousseau) and Garnacha Tintorera (Alicante Bouschet) • Sourced from the miniscule (< 1ha) north-facing El Cerro at 800m ASL on schist and slate • Fermented spontaneously in neutral open-top vat with 100% whole bunches • Six months (!) of post-fermentation maceration before pressing • Racked to two neutral 225L French barriques for about a year of elevage under flor • unfined and unfiltered

"There is very good balance in the 2016 El Cerro de Valdecañada, a wine that feels light but has lots of extraction; it had seven months of maceration with the skins and looks like a short maceration. It's a completely different profile of Bierzo—mineral and austere, with low alcohol and pungent aromas and flavors. Only 300 bottles produced." -Luis Gutierrez
