Rémi Leroy's philosophy—"more than Champagne, Champagne wine"—captures his commitment to making vinous, terroir-driven sparkling wine in the Côte des Bar. Trained as an oenologist in Bordeaux, Rémi returned to his family's holdings in Meurville to vinify roughly a third of their roughly nine-hectare estate under his own name, while the rest continues to supply larger houses. This Blanc de Blancs comes from old-vine Chardonnay selected from massal plantings, pressed gently by gravity, fermented with indigenous yeasts in small steel tanks and Burgundy oak, and bottled without fining or filtration. The Extra-Brut dosage—just three grams per liter—lets the wine's mineral purity and natural acidity speak for themselves. The 2020 vintage, harvested unprecedentedly early in mid-August, produced Champagnes of compelling ripeness balanced by fresh chalk-driven acidity. A bone-dry, mineral-driven expression ideal for oysters and raw seafood.
