The César Florido bodega was founded in 1887 and is currently maintained by César Florido, a fifth-generation descendant of the founder. This Fino sherry ages for 3 years under flor, and the fruit comes exclusively from the famed Miraflores and Bilbaína pagos, or vineyards. It's intensely saline, thanks to tis proximity to the Atlantic, and pairs perfectly with seafood or anything fried.
