A rare grape from Castilla la Mancha, fermented and aged in amphora. It's full of flavors of ripe plum, blackberry, fresh herbs and confit strawberries, with refreshing acidity and a svelte, light-to-medium body.

VINEYARD
Organically grown grapes in the village of Villarrobledo and El Provencio. 70+ year old vines

VITICULTURE
Organic viticulture. Bush pruned vines. Harvest is done by hand.
VINIFICATION
The grapes are destemmed and kept at cool temperatures until fermentation kicks off spontaneously. Macerated until the end of alcoholic fermentation, with regular cap wetting, then pressed and transferred to 100 year old clay amphora of 60-420L capacity.
AGING
Aged in the tinajas for about 100 days - over winter and moved out of tinaja before local temperatures rise. Bottled with no fining or filtration.
