VINEYARD
Organically grown grapes in the village of Villarrobledo and El Provencio. 25-30 year old vines

VITICULTURE
Organic viticulture. Bush pruned vines. Harvest is done by hand.
VINIFICATION
The grapes undergo a cool pre-fermentation maceration for 3 days and then fermentation with native yeasts with the skins before being pressed in to tinajas.
AGING
Aged in the tinajas for about 100 days - over winter and moved out of tinaja before local temperatures rise.
