Cazé-Thibaut’s Champagne “Crayère” Brut Nature NV, based on the 2021 vintage, is a pure and expressive Champagne that beautifully reflects its terroir in the Vallée de la Marne. As a grower-producer committed to organic and biodynamic practices, Cazé-Thibaut carefully tends the vines to ensure each grape expresses the vineyard’s unique character. “Crayère” is crafted primarily from Pinot Meunier, with smaller portions of Chardonnay and Pinot Noir, which together bring balance, complexity, and elegance. With no added dosage, this Brut Nature style highlights the wine’s natural acidity and minerality.

On the nose, “Crayère” offers inviting aromas of crisp green apple, lemon zest, and white flowers, underscored by chalky mineral notes that hint at the vineyard’s limestone-rich soils. The palate is vibrant and focused, with flavors of citrus, orchard fruits, and a fine, persistent mousse. The Brut Nature classification gives it a precise, dry finish that leaves a lingering impression of chalk and subtle saline.

Grapes | 55% Meunier, 45% Chardonnay

Vineyards | Fruit selection from top parcels in/around Châtillon-sur-Marne.

Vinification | Grapes are picked by hand when fully ripe and are then pressed slowly and gently. All juice is moved by gravity into steel tank. Once each parcel is pressed, the juice is transferred from tank into 50% tank, 50% 228, 350, and 330L barrels for a long, cold, and slow native yeast fermentation. Full malo. Aged 24 months years sur lattes. Unfined and unfiltered; zero dosage.

Fabien Caze-Thibaut calls the Châtillon-sur-Marne and Vandières, a village on the western side of the Vallée de la Marne, home. His limited experience is not in line with his outsized skill at crafting Champagne. His peers, including Raphael Bérêche, Emmanuel Brochet, and Vincent Laval recognize his talent, and recently inducted him into the Terre et Vins, a prestigious group known for its forward-thinking approach to farming and winemaking
