Single malt whisky produced by Spirits of Yorkshire in Hunmanby, North Yorkshire, England, using 100% estate-grown barley from co-founder Tom Mellor’s family farm
Barley is mashed and fermented using chalk-filtered water from beneath the Yorkshire Wolds (a range of open country hills that spans East & North Yorkshire), and distilled on Forsyth copper stills
Non-age statement; Aged in ex-bourbon barrels; finished in shaved, toasted, re-charred (STR) ex-red wine barriques from Rioja vineyards in Spain
A nose of vanilla, licorice root, apple, nutmeg, and black pepper transition to a palate of apple, candied cherry, freshly turned soil, toasted oats, and pomegranate with subtle salinity
Bottled without additives or coloring
