Grapes | 100% Pinot Meunier

Vineyards | Selected from parcels in seven villages in the Côteaux Sud d’Epernay and Vallée de la Marne. 

Vinification | 60% white pressed Meunier, 30% maceration, 10% red Meunier. The goal is to strike a balance between a fruity Rosé d’assemblage and the meatier aspects of Rosé de Saignée. 2.5 g/l dosage (Ultradition Rose w/ less dosage).

All of his wines are aged in neutral barrels, do not go through malolactic fermentation and have just enough dosage to balance the wine and showcase the terroir.
