Dry Graves white from a 17th-century estate designated a historical monument in 2008. Perromat family ownership since 1958; Xavier Perromat (7th generation winemaker) acquired the property with wife Caroline in 2012. 30 hectares total, with 5 hectares dedicated to sweet Cérons AOC. Blanc Sec blend: 55% Sémillon, 45% Sauvignon Blanc, 5% Sauvignon Gris. Cold soak 2-3 days, fermented in concrete vats, malolactic in concrete, selective oak aging.
