If you like fresh, mineral-driven white wine, you'll go bonkers for the wines of Paul-Henry Pellé. This guy is a star. Qualitatively, these wines can go tête-a-tête with top-shelf Sancerre, but they're a great deal less expensive. Farming is organic.Pellé uses both stainless steel and wood, not only for élevage, but fermentation as well. This explains why the wines have bracing citric electricity tempered by a suave, creamy texture – "lemon curd" often pops up in our tasting notes.
