Champagne Guiborat’s “Prohibition Meunier” Non-Dosé NV, based on the 2020 vintage, is a bold and unique expression of Pinot Meunier from the Vallée de la Marne, showcasing the lesser-seen side of Guiborat’s winemaking. Known for their commitment to terroir, Guiborat has crafted this cuvée as a tribute to the depth and character of Pinot Meunier, vinified with no dosage to preserve the wine’s natural vibrancy and structure. By focusing on purity and allowing the grape’s full expression, “Prohibition Meunier” presents an unfiltered look at the varietal and its origins.

The nose of “Prohibition Meunier” offers layered aromas of red apple, wild berries, and citrus zest, complemented by earthy, floral undertones and a subtle hint of spice. The palate is both lively and intense, revealing flavors of fresh orchard fruit, orange peel, and a distinct mineral core, accompanied by a crisp, linear acidity. With no dosage, the wine finishes dry and refreshing, emphasizing the chalky minerality and natural texture derived from the terroir.

Ideal for pairing with savory fare, such as charcuterie, grilled vegetables, or umami-rich seafood dishes, this Champagne shines as a versatile and food-friendly option. The 2020 base vintage adds youthful energy and precision, making “Prohibition Meunier” a distinctive choice for those looking to explore the raw character of Pinot Meunier in its purest form.

Champagne Guiborat

Champagne Guiborat is one of our most sought-after small growers — folks just can’t get enough of these racy, crystalline expressions of Côte des Blancs Chardonnay.

The Guiborat family traces their roots in the Côte des Blancs back to 1885, but it was only in 1996, when then 21-year-old Richard Fuoquet (the Guiborat name and the vines come from his mother’s family) packed up his life in Paris to join his Grandmother at the family domaine. He selected 3 hectares of their best terroirs, converted to organic viticulture, and Champagne Guiborat was born.

Richard's decision to convert the farming and stop selling to the Grand Marques was radical back then. But he's simultaneously also preserved time-honored Champagne traditions, such as a focus on blending of sites and terroirs, a technique that's seen less often as single-vineyard bottlings continue to trend. Through blending, Foquet employs a wide palette of flavors and textures through which he can capture a unique expression of his prime terroirs.

Professional Reviews

Antonio Galloni

AG 93
"The 2019 Prohibition Meunier Non-Dosé is wonderfully fresh and vibrant. Orchard fruit, dried flowers, mint and lightly spiced notes abound. This layered, focused Meunier from two neighboring old vine plots in Mardeuil (planted between 1954 and 1960) presents so many reasons to recommend it. As always, the style is one of racy, mineral-driven tension. This finishes with striking tension and nuance. Zero dosage. Disgorged: May, 2023." -Vinous

"Guiborat's NV Extra-Brut Prohibition is produced from vines in Mardeuil planted between 1964 and 1968, and the latest release, based on the 2019 vintage, was disgorged in February 2023. Bursting with aromas of freshly baked bread, nectarine, mirabelle plum and spices, it's medium to full-bodied, fleshy and pillowy, with racy acids and a chalky finish. It's the most immediate wine in the range." -Robert Parker

Champagne

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
