From family vineyards in the villages of Puéchabon and Aniane. Blend of 50% Merlot (35 yr old vines), 40% Mourvedre (10 yr old vines), 10% Grenache (40 yr old vines).
Soil
Glacial limestone, gravelly clay topsoils
Viticulture
Organically farmed by hand, including green harvesting. Recently began the embrace of the regenerative practices of year round cover crops and low-/no-till. All grapes hand harvested, transported in baskets and destemmed.
Vinification
Fermentation in tank, pump overs (according to tasting) during the three week cuvaison.
