Made from Pinot Noir grown in the southern stretches of Champagne’s Côte des Bars, Bistrotage B.19 is part of Françoise Martinot’s stripped-down, food-first project. No dosage, no artifice—just fruit, limestone, and time on lees. This is Champagne meant to live in glasses, not in cellars.

Disgorged in 2023 from a base of the 2019 harvest, the wine is vinous, dry, and quietly expressive. It doesn’t sparkle for effect—it hums with texture and quiet grip. Less about celebration, more about conversation.

Bistrotage isn’t built to impress sommeliers. It’s built to disappear slowly over the course of a long meal. And that might be the highest compliment of all.
