If Mariotto's Derthona is the introduction to Timorasso, Pitasso is the deep dive. This is a single-vineyard bottling from one of Claudio Mariotto's most important sites in the Colli Tortonesi, the grower who did as much as anyone to rescue this nearly-extinct Piedmontese white from oblivion. It's 100% Timorasso, dry, raised on its lees in stainless steel and then rested a good year-plus in bottle before release, which is exactly why it shows more breadth, more golden fruit, and more of the savory, mineral backbone that has people calling Timorasso Piedmont's great white wine. This is a wine with real structure and cellar potential. Serve cool but not cold to let its texture unfurl, and give it air or a few years.

Claudio Mariotto is to Timorasso what certain legendary winemakers are to their grapes: the keeper of the flame. His grandfather planted the first vines in the 1920s; Claudio inherited 60 hectares and recognized Timorasso's potential just as the variety was being resurrected from near-extinction in the 1990s. His five single-vineyard expressions—Bricco San Michele, Cavallina, Pitasso—define what this fickle white grape can achieve in Colli Tortonesi.
