Dry Chenin Blanc from one of the Loire's biodynamic pioneers. François Chidaine took over his father's vines in 1989, achieving organic certification in 1992 and biodynamic certification in 1999—far ahead of the trend. Les Argiles comes from 40-year-old vines on clay soils in Vouvray. Whole-bunch pressed into steel, wild yeast fermentation that can take up to six months, aged 8 months on lees in large demi-muid barrels, bottled unfiltered. Just 4 g/L residual sugar. Demeter certified since 2003. Now farming 37 hectares with regenerative no-till practices.
